Elote con Marijuana

Elote with Cannabis

One of our favorite Mexican foods is the humble Elote. Now for those who do not know, an Elote is a popular snack sold by vendors both on the streets and at festivals in Mexico. This dish is prepared many ways so we’ve broken it down to 2 different recipes that we like but, feel free to improvise the way you want.

Elote with Butter

Ingredients
  • 4 ears of corn, shucked
  • 1 tablespoon canna-butter
  • 1/4 cup feta or cojita cheese, plus more for serving
  • Tajin Seasoning or cayenne pepper, to taste
  • 4 lime wedges (optional)
Directions
  1. Preheat an outdoor grill for medium-high heat.
  2. Grill corn until hot and lightly charred all over, 7 to 10 minutes, depending on the temperature of the grill.
  3. Squeeze some lime juice over the cob and then spread the butter evenly.
  4. Sprinkle the cheese to the desired amount.
  5. Finally add the Tajin Seasoning/Cayenne Pepper to taste.

Elote with Canna-Mayo

Ingredients
  • 4 ears of corn, shucked
  • Half Gram or Full Gram Distillate, *this you could adjust to your preference*
  • 1/4 cup mayonnaise
  • 1/4 cup feta or cojita cheese, plus more for serving
  • Tajin Seasoning or cayenne pepper, to taste
  • 4 lime wedges (optional)
Directions
  1. Take a large pot and fill it with water. When the water starts boiling, add salt and drop the corn in.
  2. Cover the pot and let the water return to a boil again. Once it reaches a boil, turn off the heat and keep covered for 5 minutes. 
  3. After 5 minutes remove the corn to let cool.
  4. While the corn is cooling, take your distillate and mix with your 1/4 cup mayonnaise.
  5. Once the corn is cooled enough to touch, squeeze/rub your lime wedge over the cob.
  6. Spread the cannabis mayonnaise and sprinkle the cheese to your desired amount.
  7. Finally add the Tajin Seasoning/Cayenne Pepper to taste.
