Medicated Simple Syrup

Want to make your classic drinks without having to resort to converting your entire stock of alcohol into cannabis spirits? Well here is a simple syrup that will allow you to whip up drinks for a crowd that may want to participate in a medicated drink or not. This recipe utilizes either Demerara sugar or raw honey but feel free to update it to the way you like it!
Serving: 1 cup

INGREDIENTS

If utilizing Demerara sugar:

  • 1 cup filtered spring water
  • 1 cup demerara sugar
  • 4 grams finely ground decreed cannabis
  • 1 tbsp vegetarian (non-GMO) liquid lecithin

If utilizing raw honey:

  • 2 cups filtered spring water
  • 1 cup raw honey
  • 4 grams finely ground decreed cannabis
  • 1 tbsp vegetarian (non-GMO) liquid lecithin

DIRECTIONS

  1. Pour the water into a sauce pan and bring to a rolling boil. Reduce the temperature to about 190ºF. Add the sugar or raw honey and stir until it completely dissolves into the water. (If you’re using raw honey and you find that the syrup looks to clear, you can add a little more honey.)
  2. Add the cannabis, then cover the saucepan. Reduce the heat again to about 160ºF and simmer for at least 30 minutes to infuse the simple syrup with the cannabis.
  3. Reduce the temperature again to a medium-low heat  and add the lecithin. This helps keep the ingredients from separating.
  4. Cook for another 10 minutes, stirring consistently to prevent cooking and burning.
  5. Remove from the heat and strain through a cheesecloth-lined strainer into a stainless steel bowl that is resting in a larger, ice-filled container.
  6. Once liquid is cooled, you can save in a mason jar to utilize in any recipe that calls for simple syrup.
