Dumplings

Ingredients

  • 2 tablespoons cannaoil
  • 1 package of your favorite frozen Asian-style dumplings
  • 1⁄2 cup creamy peanut butter
  • 2 tablespoons low- sodium soy sauce
  • 1 tablespoon packed light brown sugar
  • 1 tablespoon freshly squeezed lemon juice
  • 1⁄2 teaspoon minced garlic
  • Pinch of red pepper flakes

Directions

  1. Heat the cannaoil in a large nonstick lidded skillet over medium heat. Place the dumplings  at side down and cook on one side until light golden brown. Turn and cook on the other side until light golden brown, about 8-10 minutes total. Add enough water to cover the bottom quarter of the dumplings, and cover the pan. Cook, covered, for 7 minutes. Remove the cover, allowing the water to evaporate, and cook the dumplings, turning them a few times, until they are golden brown all over and crisped, about another 6-9 minutes.
  2. While the dumplings cook, prepare the dipping sauce: in a medium bowl, thoroughly combine the remaining ingredients.
  3. Serve the dumplings warm alongside the sauce.
